Herb Potato Wedges with Homemade Tomato Sauce

Oh how I love me some potatoes! Yes please. They are comforting and definitely full the gap! I used to love hot chips as a child with some sweet All Gold tomato sauce, I mean who didn’t? So when heading onto this health journey I ditched the oily deep-fried chips and these oil free hearty potato wedges were born!

Potatoes have a neutral starchy flavor ,who wouldn’t want to eat them every week! With all this low carb stuff going on, lets talk a bit about the goodness of Potatoes! Don’t fear the carbs (:  I mean there are about 100 varieties of edible potatoes to choose from. The skin of potatoes are generally brown, red or yellow, while the flesh is yellow or white. There are also other varieties available that feature purple-grey skin and a beautiful deep violet flesh. They range in size, shape, color, starch content and flavor. You can boil them , mash them , make chips or just a good old baked potatoes. They are generally well priced and a staple in many people’s diet. They are known to  improve digestion, reduce cholesterol levels, boost heart health,brain function, helps prevent cancer, manage diabetes, strengthen the immune system, reduce signs of aging, protect the skin, increase circulation, lowers blood pressure, reduces inflammation, maintain fluid balance, reduce insomnia, and boost eye health.

Potatoes as a very good source of vitamin B6(builds your cells, brain cell and nervous system activity, cardiovascular protection) and a good source of potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fiber, and pantothenic acid. Potatoes also contain a variety of phytonutrients that have antioxidant activity.

Then we have the gorgeous Sweet potato. These, as their name states are sweet and can be rich in flavour. They are so delicious and the orange sweet potatoes boast high amounts of Beta-Carotene and have the ability to raise our blood levels of vitamin A. The purple-fleshed sweet potato anthocyanins (Anthocyanins are water-soluble vacuolar pigments that may appear red, purple, or blue depending on the pH), primarily peonidins and cyanidins—have important antioxidant properties and anti-inflammatory properties. Especially when passing through our digestive tract, they may be able to lower the potential health risk of heavy metals and oxygen radicals. Sweet potatoes are anti inflammatory , help with the improvement of blood sugar regulation,  and are particularly high in Vitamin A, Vitamin C , Manganese, Copper, Pantothenic Acid , Vitamin B6, Biotin, Potassium and Fiber . So you should definitely eat your potatoes. Don’t be scared  (:

Wedges

Ingredients * Use Organic where possible

4 Large Potatoes (all different varieties)
1 Tbsp Herbs (oregano, thyme)
1 tsp Garlic flakes
1 tsp Coriander powder (optional)
Pinch Salt

Directions:

Preheat oven to 170 degrees, Cut potatoes into large wedges, sprinkle on herbs, garlic flakes and salt. Place on baking tray and bake for +- 60 minutes, until crispy. OR boil potatoes for 15-20 minutes sprinkle on herbs, garlic flakes and salt, and then place on baking tray and bake for 30 to 40 minutes. Half way flip your wedges !

Tomato Sauce

Ingredients: * Use Organic where possible

500g Pure Tomato Puree
2 Tbsp Coconut Sugar
1tsp Oregano
Black pepper to taste
Pinch of Himalayan Salt

Blend all ingredients until smooth. Enjoy with your herb wedges!
