Superfood Granola

I love superfoods and I love granola! So I joined the two in marriage, and my goodness its a great one (; Its so nice to know your getting all this goodness in your breakfast bowl and it tastes amazing! It is also great as a after dinner treat (;

This recipe is fairly easy and you can either dehydrate it for the raw version or cook it in the oven which is quicker. I try make a big batch of this to last the month, but it never does!

Superfood Granola

Dry ingredients: *Use Organic where you can

2 Cups Oats
1 Cup dehydrated Buckwheat (or oats)
1 Cup mixed seeds (sunflower, pumpkin, sesame)
2 Cups Pecan nuts(chopped), -other nuts are great to use too
1/2 Cup Goiji Berries
1/2 Cup Hemp seeds

Paste Ingredients:

2 Cups Raw cashews (soaked 2 hours)
1 tsp Vanilla powder
6 Medjool Dates
1/4 Cup Organic Maple Syrup
1/2 tsp Himalayin Salt
1 tsp Cinnamon
1 Cup dairy free milk(I use almond)
1/2 Cup filtered water

Directions:

Firstly you want to combine all your paste ingredients in a high speed blender and blend until smooth. Combine your dry ingredients(except hemp seeds) in a large mixing bowl and then add your paste ingredients to that and mix well.

*If using an oven I suggest adding both hemp seeds and goiji berries after cooking, and any other superfoods you would like to add.

Once combined spread a thin layer of your granola on your dehydrator trays, or your tray to pop into the oven.

The cooking time for the oven is 25-30minutes and the dehydrator takes about 12-16 hours, or until nice and dry. (I find all dehydrators do dry at different speeds, so see how yours goes).

If using the oven turn your granola every 5 minutes or so, and I suggest the same in the dehydrator after your first 2-3 hours give it a mix around.

Once dry and ready you can add your hemp seeds and other superfoods you may enjoy, you can store your granola in a glass jar, that will keep it fresh and it looks really pretty ! Serve with a plant-based milk of your choice and fruit (I like banana).
