Soft chewy Medjool date balls with Carob

dates 1Dates oh dates oh how I love you! And it hasn’t always been that way. I remember thinking when I was on the processed sugar train, I can’t wait for the day where I find dates delicious and sweet! And the day has come my friends! I LOVE dates. Especially Medjool dates, they are soft chewy and toffee like, and did I say sweet!

Dates are such a great alternative to your usual refined sugar, they are great for cooking and raw desserts, or just on there own! Yum. So as I always do I’m going to give you a bit of info on the amazing health benefits of dates and why you should definitely add them to your diet!

Dates have so many great health benefits from helping with relief from constipation, intestinal disorders, heart problems, anemia,  sexual dysfunction, diarrhea, and abdominal cancer. The fruits grow on the palm tree belonging to the family of Arecaceae. These delicious fruits contain oil, calcium, sulfur, iron, potassium, phosphorous, manganese, copper and magnesium and are high in many Vitamins like thiamin, riboflavin, niacin, folate, vitamin A and vitamin K and they are a great source of fibre!

When the body begins to absorb the high nutritional value of the dates, feelings of hunger are reduced and you feel satisfied. Also, the nervous system can get a lot of help from consuming dates, since they have high amounts of potassium.

Dates are one of the very best sweet and versatile foods that can regulate the digestive process. They give a great boost for your energy levels within half an hour of consuming them. Quite amazing little gems hey!

Now onto the recipe. This is my go to recipe when I want a sweet treat. It is handy to make a big batch and then keep them on hand for a extra energy boost when you need! This recipe is quick and easy which is what most of us are looking for, so here we go.

Ingredients: *Use organic where possible

1/2 Cup Almonds(Soaked)
3/4 Cup Cashews(Soaked)
2Tbsp Coconut Oil
6 Large Medjool Dates
2Tbsp Carob Powder
1/2 Cup Desiccated Coconut (for rolling)

Directions:

Firstly you want to soak your Almonds over night or at least 6 hours to remove phytic acid and they will then digest better. Soak Cashews for 1 hour. Remove pits from your dates, and melt your coconut oil (don’t heat) then place all your ingredients (except coconut) into a food processor and process until smooth. Then using your hands or a spoon roll into balls and cover with coconut. If the mixture is very sticky and warm allow it to cool in the fridge for 10-15 minutes and then roll.

Once rolled place is the fridge and enjoy!
