Rice Crispy Almond and Chocolate Squares

rice crispy 1One of my best memories from childhood are all the sweet treats my mom made , sweet fudge, marshmellows melted on marie biscuits, and rice crispy treats!

Whenever we had bake sales at school we had rice crispy treats filled with refined sugar of course, oh but I loved them, the sweetness with the sticky crunch from the marshmallows. Since starting this health journey I have missed these. So I set out on a mission to make a healthy version. What to replace with marshmallows…mmmm I tried with the amazing almond butter and they turned out so great, I ate most of them , whoops(;

Here is a little info on why almonds are the best!

This little nutritional nut is boosting with nutrients like vitamin E, calcium, phosphorous, iron and magnesium. It also contains zinc, selenium, copper and niacin. Compared to all other nuts, almonds have the most nutrients as well as being alkaline in the body. The almond that we think of as a nut is technically the seed of the fruit of the almond tree , how amazing is that!

With that they are good for your brain, regulate cholesterol , strengthen the immune system, great for bone and teeth health as they are high in Phosphorus. Almonds are anti-inflammatory as they have two very important fatty acids, both linoleic and linolenic acids. Those fatty acids help to reduce inflammation all around the body. The potassium present in almonds helps to regulate blood pressure, they also boost your energy and help prevent cancer. Pretty amazing little guys they are! So eat your Almonds.

Rice Crispy Almond and Chocolate Squares

Ingredients:*Use Organic ingredients where possible

3 1/2 Cups sugar free rice Crispies (I used Natures fresh organic, find a brand that is sugar free)
1Tbsp Coconut oil
1/2 Cup Maple Syrup
2 Tbsp  Raw Cacao1/2 Cup Almond Butter
1/2 tsp kosher salt, or to taste
1 tsp Vanilla extract

Chocolate Sauce

1 Tbsp Raw Cacao
1 Tbsp Maple Syrup
1 Tbsp Coconut oil

Directions:

For the crispy treats, on a stove top, melt the coconut oil, maple syrup and salt, just until the coconut oil is smooth then set aside. In a large bowl mix the Almond butter with Raw Cacao and vanilla extract. Then add the coconut oil mixture to the almond butter mixture and stir well. You can then add in your rice crispies, mix until well combined and place in a 8″ by 8″ pan that is lined with baking paper. Set in the freezer while you make your sauce.

The sauce is quick and easy, simply melt your coconut oil and maple syrup in a doubler boiler, once melted add in Raw Cacao and mix with a fork until smooth.

Remove your crispy treats from the freezer and then spoon the sauce straight on. Either place back in the freezer or in the fridge until set (:

Enjoy!!! They are so yum I couldn’t stop eating them. These are particularly great for kids birthday party’s or lunchbox treats(:
